Gamoneu cheese has a thin rind and characteristic sienna colour due to its smoking process. The paste is yellowish and firm but tends to crumble when cut. It presents small, irregular eyes scattered and spread throughout the paste. Gamoneu cheese has a smell of medium intensity, less penetrating than other blue cheeses, with combined aromas of mould and smoke. Slightly acidic and spicy taste at first, it has a persistent nutty aftertaste of hazelnuts. Its texture in the mouth is hard or semi-hard, firm and granular.
