Olavidia is a delightful goat cheese that's both soft and creamy, offering a fantastic texture and a taste that's subtly buttery with hints of flowers, reflecting the goodness of the goats' diet. Its whitish colour is elegant, and when you cut into it, you'll notice a vein of ash, similar to the classic Morbier cheese.

Back in 2018, Olavidia won the title of Best Spanish Cheese, and the recognition continued the next year when it snagged a silver award at the World Cheese Awards. These achievements highlight the exceptional quality of this unique artisanal cheese.

What makes Olavidia extra special is that it's entirely crafted by hand from the gentle milk of goats that are well taken care of. This cheese goes through a natural process called lactic coagulation, taking on a distinctive square shape and maturing with molds that have a touch of charcoal. Visually, it's eye-catching with a white mold crust and a layer of ash. The cheese's charm is not just in its crust but also in a line of edible ash running through its center.

Aged for fifteen to twenty days, Olavidia boasts intense flavours dominated by creamy dairy goodness, and there's a subtle hint of white almonds. The recent win as the Best Cheese in the World Awards in 2021 further solidifies Olavidia's reputation as an outstanding and globally recognized cheese, attesting to its exceptional quality and taste. It's a simple yet extraordinary cheese, inviting you to savour its unique and delightful character.
