A new cheese from Spain in the Roquefort style, but less aggressive on the palate and with a lovely nutty blue vein to give acidity, Peralzola Blue Cheese is unique among Spanish blue cheeses because it is made from rich sheep's milk. The natural strength of this cheese is softened by the sweetness of the sheep's milk, creamy and nutty, with a mild blue sharpness, it is ideal served with fresh fruit at your next wine tasting and is also delicious in salads. Intensely creamy it can also be paired with a Sherry like Ximenez or Port.
