El Viejo Pescador Octopus is cleaned, cut by hand and cooked in its own juices at a low temperature. This juice makes the octopus wrapped in its jelly, ideal for keeping all its original flavour. It feeds on shellfish such as sea urchins, which gives it a unique and exquisite flavour.
