What makes Olavidia extra special is that it's entirely crafted by hand from the gentle milk of goats that are well taken care of. This cheese goes through a natural process called lactic coagulation, taking on a distinctive square shape and maturing with molds that have a touch of charcoal. Visually, it's eye-catching with a white mold crust and a layer of ash. The cheese's charm is not just in its crust but also in a line of edible ash running through its center.
Aged for fifteen to twenty days, Olavidia boasts intense flavours dominated by creamy dairy goodness, and there's a subtle hint of white almonds.
